It’s been a long time since we had a dinner club. There was a lot of change at the end of last year with all the members of dinner club – new baby, house moves, holidays and generally, too much hard work and not enough time to spend thinking about new meals to cook. And now it’s 2014 and it’s a new year and it’s time to get back into the swing of things (holiday pictures coming soon!) and we kicked off with a delicious dinner club at Liz’s lovely flat.
Starters was a perfectly cooked fillet of seabass – crispy skin, soft flesh and beautifully seasoned – served with a simple and tangy mango and red onion salsa. Perfectly complimented.
Main course was a perfect amount of freshly cooked pasta in a sausage carbonara sauce, served with a rocket and roasted butternut salad dressed with balsamic reduction. Honestly, I think you’ve probably seen this salad before – I think Liz might be obsessed with it – and to be honest, I totally understand why – it’s delicious and a perfect side dish for nearly anything. Plus, add some chicken to it and it’s a perfect main course. Anyway, sausage carbonara – I much prefer this to normal carbonara – sausage is far far superior to bacon. Perfectly cooked, no scrambled egg, deliciously saucey.
And then dessert was a lovely, and light dish, of blackberries, cassis-spiked mascapone and crunchy biscuit base. A perfect end to a delicious meal.
