Recipe is the lovely Lorraine Pascal’s but substitute 1 tablespoon of rosewater and 1 tablespoon of orange blossom water for the 2 tablespoons of water that you use to do the castor sugar syrup. I also couldn’t get the bloody things to cook with the oven door open so did it with them shut, which worked. Additionally, I have no idea why she tells you to preheat the oven at the beginning of the recipe because you have to leave them for 30 mins to get a skin on them. Which means the oven will be on, heating up, for at least an hour.
