To prepare the Bream
Ask your butcher to make sure that it’s scaled and gutted.
Add some lemon slices in the cavity.
Slash the skin and season + some lemon zest.
Roast in foil on top of some veggies for 20 mins. We went for peppers and cherry tomatoes.
Finish under the grill to brown slightly.
For the Sweet potato rosti
peel some sweet potatoes
grate them and mix with one beaten egg
Pile up in some chefs rings and pack down carefully.
Fry on each site for 3-5 mins to brown and then bake in oven for approx 20 mins.
Served here with pesto sour cream.
I’m not telling you how to do griddled leeks, because if you can’t do it, then there is no hope!
