I think that most diet magazines and foodie things talk about quinoa at some stage. They also tell you how to pronounce it ‘keen-wa’ and that it is high in protein and exceptionally good for you. I have since discovered that it is really nice tasting – almost nutty – and really easy to cook – boil in salted water for 10 mins.
I added some dried cranberries to mine while it was cooking and then after cooking and cooling, I fluffed it (ooo eer!) up with a fork, added some toasted pine nuts and some crumbled goats cheese and some chopped hearts of romaine lettuce and tomatoes. Lovely. Probably would have been nicer if I had remembered to bring the salad dressing I made. Which was red wine vinegar, olive oil, salt and pepper all mixed up.
