This was faintly amazing.
In part of my ongoing campaign to eat more vegetables and generally do more interesting side dishes, we invented this last night. I say invented, I bet someone else has done it before but it was YUM. It’s just another version of caulicheese but no cauli and no cheddar.
Roast brocolli and large chunks of courgette in the over for 20 mins. While that’s roasting, make a basic roux and then crumble in some light goats cheese and lots of black pepper. Pour over the broc & courgettes and crumble more goats cheese on top. Dribble.
It might have been better with some breadcrumbs on top with the goats cheese.
