This was amazing, made the usual way (with the addition of 2 teaspoons of cumin) but with black beans rather than kidney beans, and then at the end, we added the juice of half a lime and about half a packet of chopped coriander. Served with grated cheese, butternut wedges, guacamole and sour cream. Completely different flavour to usual and so much more in flavour and impact. I recommend this highly.
This was a vegetarian stack that we made in honour of Martin’s visit to Bristol. Mine did NOT look like the recipe but it really was quite delicious. I would make it again without a problem but it really is wicked.
