Sweetcorn bread and KFC style chicken


Both of which I have been meaning to make for ages and both of which are nice but slightly not quite right.

The chicken was lovely and crispy and the skin came out really tasty, it’s baked rather than fried and I think it needed something else to make it a little crispier. Quite tasty tho and definitely a good placeholder for a real KFC.

The sweetcorn bread was nice but given that I had to make the creamed corn, I think that the texture of the bread was affected as I had to add some milk to the mixture to make it runny enough to bake. It was a little stodgy actually and I think next time it would be better with perhaps self raising flour. And it needed something else to flavour it, perhaps some sage or basil or rosemary.

Still, very tasty and definitely reminded me of childhood.
