Weekend Cook Fest

This weekend I’m going to make this very nice looking carrot cake and potter around and perhaps do my window boxes.

12 oz finely grated carrot
8 oz wholemeal flour
8 pz brown sugar
4 tsp baking powder
4 eggs
Handful chopped walnuts
Zest of an orange
3 tsp cinnamon
1 tsp salt
Half a cup meleted butter/oil (I wasn’t sure how much that was, just kept adding more until the mixture looked good Embarassed ).

For icing:
3 oz cream cheese
Hlaf pound icing sugar
1 tsp vanilla essence
3 oz butter

Mix all the dry ingredients together. To this mixutre add the walnuts and carrots, mixing well. Take the four eggs, beat them and add them along with the butter or oil to the mixture. Once well mixed, pour into 2x1lb loaf tins (or a 9″ round cake tin).
Bake for an hour at 350F, 180C, Gas Mark 4.

Maky icing by beating all ingredients together, and once the cake is cool, decorate the top and side of the cake with icing.
